    Ginisang Sayote (Sautéed Chayote) is a simple, delicious, and nutritious Filipino food that is made of sliced chayote, vegan luncheon meat, savory sauces, and healthy seasonings. It's so easy-to-cook, budget-friendly, and a great option for a vegan/vegetarian family lunch or dinner.

    Sayote or chayote is technically a fruit but is consumed like a vegetable. It is an edible plant from the gourd family that is widely used in many cuisines. It is a common ingredient in Filipino recipes like soups, stews, or stir-fries that are packed with vitamins and minerals.

    Health Benefits of Sayote

    Our star ingredient - sayote, also called chayote or vegetable pear, is a common vegetable in Filipino cooking. Its mild taste and soft texture make it perfect for many dishes aside from being healthy:

    • Improves liver health
    • Provides essential vitamins like potassium, calcium and vitamin C
    • Reduces visible signs of aging.
    • Promotes heart health and fiber
    • Improves cholesterol and blood sugar control
    • Supports a healthy pregnancy
    • Good source of protein and trace minerals

    Variations

    • Coconut Cream - add coconut cream or coconut milk for a creamy twist.
    • Peanuts - stir in peanuts or a spoonful of peanut butter while cooking the sayote.
    • Sweet Corn - add corn towards the end of cooking for a crunchy texture.

    Substitutions

    • Vegetable Oil - use coconut oil for a slight tropical flavor or olive oil for a healthier option with a mild taste.
    • Vegan Luncheon Meat - sliced shiitake or button mushrooms work for a meaty bite
    • Soy Sauce - use coconut aminos for a gluten-free, low-sodium alternative or tamari for a gluten-free soy sauce substitute.

    Storage

    • Place the leftovers in an air-tight container and refrigerate for up to 3 days.
    • Please note that the chayote turns mushy when frozen and thawed so this dish doesn't freeze well.

    Ingredients

    Listed below are all the ingredients you will need (omitting quantities):

    • vegetable oil
    • vegan luncheon meat 
    • sweet onions
    • sayote
    • garlic
    • soy sauce
    • mushroom oyster sauce
    • water
    • salt
    • ground black pepper

    Instructions

    Place the oil in a heated skillet over medium heat. Fry the vegetarian luncheon meat until crisp on both sides, set aside.

    Add in onions and cook until translucent. Stir in the sayote, minced garlic, soy sauce, and mushroom oyster sauce.

    Pour in the water and bring to a boil. Add salt, black pepper, and season to taste. Then, remove and transfer to a serving bowl.

    ⭐ Top Tip

    To remove the stickiness of the sayote, slice off the top of it and rub it on the cut part of the chayote in a circular motion in a few seconds or until transparent sap / liquid turns into a white, foam-like consistency.

    Do you have to peel chayote before cooking?

    Chayote skin is edible, though most cooks prefer to remove it with a peeler. Rinse peeled chayotes under cold running water to remove the sticky sap that is just below the skin before using. Halve chayote lengthwise, and pop out the seed.

    How many minutes to boil sayote?

    It takes surprisingly long to cook chayote--30 to 40 minutes to steam or boil a whole one, six to eight minutes to boil a sliced one and or 20 to 30 minutes to bake chayote slices.

    Is ginisang sayote healthy?

    It contains nutrients like folates, which are crucial for healthy pregnancies. It also has compounds that protect against fatty liver disease. Ginisang sayote is one of the easiest veggie stir-fries you can make, and you only need a handful of ingredients for it.

    Ingredients

    For Cooking:

    • 3 tablespoons vegetable oil
    • 1 cup vegan luncheon meat diced
    • ½ cup sweet onions sliced
    • 2 cups sayote chayote, sliced
    • 1 teaspoon garlic minced

    For Seasoning:

    • 2 tablespoons soy sauce
    • 2 tablespoons mushroom oyster sauce
    • 1½ cups water
    • ¼ teaspoon salt
    • ¼ teaspoon ground black pepper

    Instructions

    Fry the Luncheon Meat:

    • Heat a skillet over medium heat and add 3 tablespoons of vegetable oil.
    • Fry the diced vegan luncheon meat until crisp on both sides. Remove and set aside.

    Cook the Vegetables:

    • In the same skillet, add the sliced onions and cook until translucent.
    • Stir in the sliced sayote, minced garlic, soy sauce, and mushroom oyster sauce.

    Simmer:

    • Pour in 1½ cups of water and bring the mixture to a boil.
    • Add salt and black pepper to taste, stirring well to combine.

    Serve:

    • Transfer the cooked dish to a serving bowl and serve immediately with steamed rice.

      Love how easy this was to make. I didn't have sweet onions, so I only used regular onions, but other then that, amazing!!
