    Ingredient Notes

See the recipe card below for ingredient quantities and complete instructions.

    • Oat milk – Offers a rich, creamy base and keeps the recipe dairy-free; you can use your favorite oat milk brand, available on Amazon.
    • Chia seeds – These tiny seeds thicken naturally and create that pudding texture; grab high-quality chia seeds online for the best results.
    • Maple syrup – A natural sweetener that blends smoothly and adds a warm, caramel-like sweetness.
    • Vanilla extract – A small splash lifts the flavor and adds warmth to the pudding.
    • Latte-grade matcha powder – Choose a smooth, vibrant matcha so the flavor stays balanced and earthy and not bitter.

    Storage

Before storing in the refrigerator, put the strawberry matcha chia pudding in an airtight container. It can last in the fridge for up to 3 days; however, it's not ideal to freeze it, as the chia texture becomes gritty.

    FAQs

What if I want to use a different milk?

Yes, any plant-based milk works, but oat milk gives the creamiest texture and a mellow taste that pairs well with berries or almond flavors.

    Can I skip the matcha?

You can, but the green tea flavor is what makes this pudding unique and balanced, and it helps prevent the chia from clumping when mixed well with a lid-covered jar.

Can I use honey instead of maple syrup?

Absolutely—just keep in mind the flavor will be slightly richer and floral, especially when combined with fresh berries.

    Can I meal-prep this?

Yes! Make individual jars and let them set overnight with the lid on to avoid clumping and enjoy easy grab-and-go breakfasts or snacks.

    • 1 ¾ cups oat milk*
    • 7 tablespoons chia seeds
    • 2-3 tablespoons maple syrup
    • ½ teaspoon vanilla extract
    • 2 teaspoons latte grade matcha powder

    For the Strawberry Purée:

    • 1 ½ cups strawberries** fresh or frozen and defrosted
    • 1 tablespoon maple syrup

    Instructions

    Make the Chia Base

    • In a medium bowl, whisk together the oat milk, maple syrup, and chia seeds until evenly combined.
    • Set aside for 10 minutes to thicken slightly.

    Make the Strawberry Purée

    • Add the strawberries and maple syrup to a blender.
    • Blend until smooth.

    Assemble

    • Layer into serving glasses: strawberry purée → vanilla chia → matcha chia.
