- Vanilla extract – A small splash lifts the flavor and adds warmth to the pudding.
- Latte-grade matcha powder – Choose a smooth, vibrant matcha so the flavor stays balanced and earthy and not bitter.

Storage
Before storing in the refrigerator, put the strawberry matcha chia pudding in an airtight container. It can last in the fridge for up to 3 days; however, it's not ideal to freeze it, as the chia texture becomes gritty.

No-Fail Strawberry Matcha Pudding
Ingredients
For the Chia Pudding:
- 1 ¾ cups oat milk*
- 7 tablespoons chia seeds
- 2-3 tablespoons maple syrup
- ½ teaspoon vanilla extract
- 2 teaspoons latte grade matcha powder
For the Strawberry Purée:
- 1 ½ cups strawberries** fresh or frozen and defrosted
- 1 tablespoon maple syrup
Instructions
Make the Chia Base
- In a medium bowl, whisk together the oat milk, maple syrup, and chia seeds until evenly combined.
- Set aside for 10 minutes to thicken slightly.
Make the Strawberry Purée
- Add the strawberries and maple syrup to a blender.
- Blend until smooth.
Flavor the Chia Mixtures
- Once the chia mixture has thickened, whisk again.
- Transfer about ⅓ cup (78 ml) of the mixture to a small bowl and stir in the vanilla extract.
- Whisk the matcha powder into the remaining chia mixture.
Assemble
- Layer into serving glasses: strawberry purée → vanilla chia → matcha chia.
- Cover and refrigerate for at least 4 hours or overnight.
Serve
- Top with fresh fruit, coconut flakes, granola, or coconut cream, if desired.
