    Why You’ll Love This Recipe

    Whenever Christmas comes around, I always stop by Costco and pick up the huge box of golden brown Shortbread cookies! I can eat these cookies for days and never get tired of them! So me being me, I decided to try making a beginner-friendly Shortbread recipe using 3 basic ingredients.

    Your classic Shortbread cookies can also be made dairy-free with vegan butter. It can fit many diets. And it's perfect for new bakers.

    Plus, brown sugar adds a touch of molasses. It doesn't just give it flavor but also a small dose of minerals like calcium and potassium.

    Ingredients

    Listed below are all the ingredients you will need:

    • Unsalted butter
    • Brown sugar
    • All-purpose flour

    Instructions

    Make the Dough:

    1. Preheat oven to 300°F (150°C).

    2. Line an ungreased cookie sheet with parchment paper or a silicone baking mat.

    3. In a large bowl, cream together the softened butter and brown sugar until light and fluffy.

    4. Gradually add the flour, mixing until a soft dough forms.

    Roll and Shape:

    5. Lightly flour your work surface. Roll out the dough to your desired thickness (about ¼ inch is typical). You can use a rolling pin.

    6. Cut into shapes using a cookie cutter or slice into squares or rectangles.

    7. Place the cookies on the prepared baking sheet, spacing slightly apart. Using a fork, gently prick the tops of each cookie to help them bake evenly.

    Bake:

    8. Let the cookies cool on the pan for 5 minutes. Then transfer to a wire rack to cool completely.

    9. Dip in chocolate if you want, and enjoy!

    Substitutions & Variations

    • Ingredient Swap
      You can swap butter with vegan butter.
      Substitute brown sugar with coconut sugar.
    • Variation
      Add almond extract for extra flavor.
      Top it with nuts, sprinkles, melted chocolate or chocolate chips on top of the dough. Make it to your personal preference!

      Avoid overbaking, as it makes the cookies dry and crumbly.

      • These cookies freeze well for up to 2 months and stay fresh in an airtight container for 1 week.
